Types of fats

Fats are a macronutrient made of carbon and hydrogen atoms, and other functional groups at times. Fats are generally hydrophobic and insoluble in water but soluble in some organic solvents. Fats serve both structural and energetic/metabolic functions. They are the most energy-dense component of a diet, and are essential to our organism. The chemical classification of a fatty molecule depends on the number and type of carbon bonds in the molecule chain. Unsaturated fats have one or more carbons with a double bond, while saturated fats only have carbons with single bonds in their chain. An important physiological function of fats is adipose tissue, the main source of energy reservoir in humans and other animals. Adipocytes are specialized fat cells that accumulate fats from diet and store them for extended time frames and secrete important hormones.
